About the location:

Purpose

The Kitchen Coordinator assists the Executive Chef by supporting in all administrative tasks & objectives related to the department.

In collaboration with the hotel health & safety officer, he/she adheres to local regulations concerning health, safety, and other Four Seasons compliance requirements as brand standards.

KEY DUTIES AND RESPONSIBILITIES

Please note that this is not an exhaustive list of everything that needs to be done. Employees always find new ways to look after the business, their guests, and their colleagues. Within this, the key responsibilities for this position are:

Planning and Organizing:

Administration

  • Implement the hotel and department regulations, policies and procedures including but not limited to:
  • House Rules and Regulation
  • Health and Safety
  • Grooming
  • Quality


  • Hygiene and Cleanliness
  • Assist in the planning of menus and recipes development with their implementation into our Birchstreet system.
  • Monitor food and operating costs controls. Ensure that appropriate records are prepared correctly,
  • In absence of Manager, conducts shift briefings to ensure hotel activities and operational requirements are known.
  • Attend and participate in daily briefings and other meetings as scheduled
  • Attend and participate in training sessions as scheduled.
  • Ensure that weekly meetings are well planned and results-orientated.
  • Co-ordinate special projects as required
  • Perform any other duties which may be assigned by the management from time to time ..


Health, Hygiene & Safety

Ensure food safety implementation in all outlets. Establish and promote a food safety culture with all related departments.

  • Maintain the highest standards of Food Hygiene, and adherence with all Health and Safety standards.
  • Report and take appropriate action to correct any health or safety hazard.
  • Ensure that operating and kitchen equipment is maintained to a good standard with minimum breakage.
  • Ensure the sanitation standards for kitchen are being met, deadlines on all projects are met.
  • Liaise with Engineering regarding maintenance and repairs of equipment
  • Check and ensure the proper storage of raw and processed food items including the condition of food in freezers.
  • Instruct staff on all emergency measures in case of accident and have a first aid kit available and stocked in the kitchens, in collaboration with hotel's clinic


  • Ensure all work areas in the kitchen are kept tidy and clean
  • Regularly communicate with the Executive Chef regarding culinary matters.
  • Keep records of all the Temperature records and filing
  • Keep all HACCP files and follow-up if HACCP procedures are being followed.
  • Ensures that employees follow all hotel, company and local rules, policies and regulations relating to fire and hazard safety, and security
  • Ensure that employees have a complete understanding of and adhere to employee rules and regulations.


Overall service

  • Perform Brand's Services behaviours in daily operation towards the guests
  • Ensure consistency service within the department
  • Direct and coordinate the daily activities of all the hotel's kitchens.
  • Sharing guest feedback to the team
  • Manage all requests made by guests, or special request from guest
  • Communicates to his/her superior any difficulties, guest or internal customer comment and other relevant information
  • Develop a positive working relationship with all employees to facilitate a team-oriented atmosphere.
  • Ensure that the company's standards are maintained in all areas.
  • Coach and guide new members of the team, putting in place proper orientation training and ongoing training and development for team members.
  • Support and facilitate staff participation in local, national and international competitions.
  • Support & develop our ESG program, on Environment & Substainibility Governance.
