Position Status: Full Time, Seasonal. Seasonal positions can be differentiated from year round jobs as the have predefined start and end dates. These dates may vary due to seasonal business fluctuations. This position would start ASAP through to April 2013, then there would be a break until June and employment through the summer. With opportunity to return next winter season. Dusty's, Whistler's original watering hole, rocks with apres, lunch, dinner and late, late nights. Featuring award-winning authentic BBQ, rockin' tunes and friendly locals. The reborn classic western ski lodge is situated at the foot of the 2010 Olympic and Paralympic Downhill course in Creekside. Open for lunch, apres, dinner and late night. Duties: • To continually strive to exceed our Guest's expectations and to create memories for guests and staff as the best mountain experience again and again • To be well versed in Whistler Blackcomb's HACCP and Food Safe programs • Ensure that all Food Safe handling procedures are followed • To ensure that temperature monitoring is done correctly, timely, documented & any critical limits brought to the attention of your supervisor • To ensure that food is received, stored, handled, prepared, and presented in a timely, hygienic & food safe manner • To ensure that temperature monitoring is done correctly, timely, documented & any critical limits brought to the attention of your supervisor • To assist in maintaining a clean, safe and dry work area at all times and at the end of the day, ensure total clean up and sanitation of a work station • Supervise kitchen staff, and have the ability to lead the team operationally and administratively in the absence of the Chef • Conduct staff training and performance evaluations • Assist in food preparation and cooking as well as planning and facilitating special events and functions • Ensure that all working areas, storerooms, coolers and freezers are clean tidy and organized • Assume responsibility for food production and service with a concern for quality control • Work as a team member with Food and Beverage staff and maintain a harmonious relationship with all departments • Ensure Food Safety compliance with regards to training, temperature monitoring, cleaning schedules and weekly internal auditing • Always show up on time, in uniform, and adhere to the grooming policy! Qualifications: • Demonstrate our core values: Safety First, Striving to be the Best, and showing that we care • Minimum of 2 years experience in Kitchen Management • 4 years experience in a high-volume kitchen facility • 2 years supervisory experience in Guest facing Food & Beverage operations • Knowledge of inventory control and coaching, training and mentoring techniques required • Strong organizational and communication skills • Extensive culinary knowledge and a passion for the industry • Ability to train all kitchen positions (dishwasher, prep cook, station cook, lead cook and Junior. Sous chef) • Knowledge of Microsoft Office • Excellent communication and motivational skills • Food Safe Certificate Level 1 and 2 - we will train • Ability to step into chef or chef manager role in the absence of chef • Proof of clear criminal record check |
